1/3 | cup | long grain rice | |

1/3 | cup | sugar | |

3 | eggs, beaten | ||

1/3 | cup | seedless raisins | |
|

1 | teaspoon | vanilla | |
|
|||
1/4 | teaspoon | cinnamon | |
|
Heat half & half in heavy medium saucepan over medium heat just to a boil. Stir in rice and sugar; return to a boil. Reduce heat; cover and simmer for 20 minutes; stirring occasionally, until rice is tender. Stir about 1 cup of the rice mixture into beaten eggs; slowly stir egg mixture back into rice mixture in pan. Cook and stir over medium heat until slight thickened. Remove from heat. Stir in raisins, vanilla and cinnamon. Place saucepan over ice cubes for 2 minutes, stirring constantly. Spoon pudding into a serving bowl and serve warm or refrigerate until chilled.
